Zucchini Wrap

Author Amy Lee

Ingredients

  • 2 zucchinis sliced thin and evenly – I recommend using a mandolin
  • 1 cup mozzarella cheese shredded

Instructions

  • Preheat your oven to 175C/350F.
  • Prepare the zucchini by slicing them nice and thin, using a mandolin. Pat dry using paper towels.
  • Lay the zucchini slices in a 5 x 4 slice rectangle, being sure to overlap them so that there are no gaps.
  • Sprinkle with cheese and transfer to the oven to bake for 25 minutes, until the cheese on top is golden and bubbly.
  • Once the wraps are done, remove them from the oven. Allow them to cool completely, then fill with your favourite sandwich ingredients and enjoy!
