Vegan Egg Scramble

Vegan Eggs

Why have normal eggs when you can save the environment (and money) with these Vegan Eggs made from chickpeas!

Chickpeas are super high in protein, fibre and nutrients and will leave you feeling fuller for longer and full of energy! These Vegan Eggs are PERFECT with my Healthy Vegan Oat Bread, nice and toasted.

Time: 10 minutes

Serves: 2

Ingredients

  • 1 tsp oil (optional) 1 can chickpeas, drained and rinsed
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp turmeric
  • 3 tbsp nutritional yeast
  • Salt & Pepper to taste 

Method

  1. Heat oil if using over medium high heat.
  2. Add chickpeas and mash.
  3. Add spices and nutritional yeast and stir through. 
  4. Serve with bread, avo, chilli flakes – try my Healthy Oat Bread recipe HERE.

Tip

Serve on top of my Healthy Oat Bread recipe – don’t forget to toast it!
