
Spicy Salmon Rice Bowl
Ingredients
- 250g/8oz salmon
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 1 tsp chilli flakes
- 1/4 cup scallions, sliced
- 1/3 cucumber, sliced
- 1 bunch cilantro
- 2 tbsp sesame seeds
- Salt & pepper
- 1 avocado, sliced
Spicy Mayo
- 1/2 mayo
- 1/4 cup sriracha
Instructions
- 1. Slice salmon into cubes. Add to a bowl with soy sauce, sesame oil, honey, rice wine vinegar, chili flakes and garlic, stirring to combine. Cover with cling wrap and place in fridge for 30 minutes or overnight. 3. Remove salmon from fridge. and airfry at 200C/400F for 6-10 minutes until salmon is cooked and browned. Remove from airfryer. 4. Serve salmon bites with rice, sliced avocado, cucumber and red capsicum. Finish with sesame seeds, spring onion and sriracha mayo. Serve immediately and enjoy!
