Smashed Potato Pizzas

Course Appetizer

Ingredients

  • 900g/2lb small white potatoes, washed, skin on
  • 1 tbsp salt
  • olive oil spray
  • 1/3 cup tomato paste
  • 1 cup shredded mozzarella or low fat shedded cheese
  • 55g/2oz mini pepperonis
  • optional basil leaves to garnish

Instructions

  • Preheat your air fryer to 200°C/400°F (220°C/425°F for your oven).
  • Place the potatoes into a large pot and fill with water to just cover them. Boil the potatoes with 1 tbs salt, until just fork tender – about 10-15 minutes. Drain and transfer to a flat surface to slightly cool.
  • Grab a small sharp knife and score the potatoes criss-cross about half way down (helps to ensure even flattening). Cut a small square of baking paper to cover the bottom of a glass jar, then pess down on each potato to flatten – this prevents the glass from sticking and thus dismantling the potatoes. Spray them with olive oil and season with salt and pepper to taste. Airfry or roast for 20-25 minutes or until they start to turn golden brown on their edges.
  • Spread potatoes with the marinara sauce, sprinkle with mozzarella then top with mini pepperonis. Place in the oven or air fryer until they're melted and golden, about 5 minutes. Sprinkle with fresh basil if desired.
