Ingredients

  • 1 tsp olive oil
  • 1/2 brown onion, diced
  • 1 handful spinach, diced
  • 1/4 tsp salt
  • 3/4 cup cottage cheese, water drained
  • 2 tbsp grated parmesan or feta
  • 1 egg
  • 3 rice paper sheets
  • 1 tsp sesame seeds

Instructions

  • In a pan over medium high heat, add olive oil and sauté onion until golden brown, about 3 minutes. Add salt and spinach until wilted and stir to combine. Turn off heat.
  • Mix together cottage cheese and parmesan or feta in a bowl until combined. Mix in cooled down onion and spinach mixture.
  • In a wide flat bowl, crack the egg and whisk well. Dip a rice paper sheet in the egg on ONE side only and lay it flat clean side down on a cutting board. Take the second piece and do the same making sure you overlap it a bit with the first piece. Repeat this step for the last piece of rice paper.
  • Spread filling down the middle of the rice paper sheets in a long line. Roll one side of the rice paper over the filling over the top, and then the other side, tucking in the sides until it resembles a long rope. Coil it into a spiral shape.
  • Brush the roll some egg wash, then sprinkle sesame seeds on top. Airfry at 200C/400F for 10-12 minutes or until golden and crispy. Enjoy!
