Ingredients

Rice Paper Baklava

  • 1/4 cup pistachios
  • 1/4 cup walnuts
  • 1 tbsp coconut sugar or sweetener
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves optional
  • 3 sheets rice paper
  • 1/2 cup warm water or rose water for soaking the rice paper
  • 1 tbsp butter melted

Optional Toppings

  • Chopped pistachio
  • Honey to drizzle

Instructions

  • In a food processor, pulse together the nuts, cinnamon, and coconut sugar until the nuts are fine. Set aside.
  • Next, take a sheet of rice paper, dip it in water and repeat this step for all three sheets. Place the wet sheets onto your work surface making sure to slightly overlap each one. Add the filling making sure to spread it evenly.
  • Take the end of the rice paper and begin to roll it over the nuts. Fold over the sides and continue to roll in a circle until it looks like a rope. Now, take one end of the rope and roll it onto itself into a coil. Brush with a little bit of melted butter and optional to sprinkle on a touch more coconut sugar on top.
  • Air fry at 200C/400F for 6 minutes or until crispy and golden. Take it out and drizzle honey and sprinkle pistachios and rose petals on top. Enjoy!
