Protein Nutella-Stuffed Cookies

You are going to love this Protein Nutella-Stuffed Cookie! It’s packed full of plant-based protein and fibre, and best of all, oozing with nutella!

Time: 20 mins | Bake Time: 12 mins | Total Time: 32 mins

Serves: 12 cookies

Ingredients

  • 1 cup mashed overripe banana (2 medium bananas)
  • 2 tsp vanilla extract
  • 1/3 cup (60g) coconut sugar
  • 1/3 cup (85g) peanut butter
  • 3/4 cup vegan Protein Powder
  • 1/4 cup raw cacao powder
  • 1/2 cup (45g) oat flour
  • 1 tsp baking powder
  • 1/3 cup choc chips
  • 1 cup homemade vegan nutella

Method

  • Preheat oven to 175 C/350 F, and line a baking tray with a reusable baking mat.
  • Mash bananas in a bowl with a fork. Whisk in the vanilla, coconut sugar, and peanut butter.
  • In a medium-size bowl whisk together the protein, cacao, oat flour and baking powder.
  • Stir dry ingredients into wet to combine. The dough will be thick. Mix in the chocolate chips.
  • Scoop up 3 tablespoons of dough per cookie, using an icecream scoop works well. Use your palms to gently flatten each ball of dough into a cookie shape. Place on the baking tray lined with a reusable baking mat.
  • Bake for 12 to 14 minutes or until the bottoms are golden. Let cool for abouct 5 minutes, then transfer to a cooling racs. Allow cookies to cool completely before storing for about 5 days, or enjoy warm!
