Ingredients

  • 1 1/2 cups (300g) long grain white rice (doesn’t stick together)
  • 1 1/2 cups (375ml) chicken stock
  • 1/4 cup soy sauce
  • 1 tbsp chinese cooking wine (substitute dry sherry, mirin, or more chicken stock)
  • 2 garlic cloves, minced
  • 1/2 tsp pepper
  • 2 cups (270g) frozen veg
  • 3/4 cup (100g) bacon, chopped

Protein of choice

  • 500g chicken mince (or beef or turkey mince or crumbled tofu)
  • 1 tbsp oyster sauce
  • 1 tbsp Chinese cooking wine
  • 2 tsp sesame oil
  • 1 garlic clove, minced

To serve

  • 2 cups liquid egg whites, mixed with 1/2 tsp turmeric powder, cooked on a pan optional
  • 1 green onion, stem, finely sliced or 1/2 cup coriander, chopped

Instructions

  • Preheat oven to 200C/180C fan-forced. Mix all Baked Rice ingredients (except vegetables and bacon) in a baking dish, until all rice is submerged. Sprinkle vegetables and bacon on top and cover with foil, then bake for 25 mins.
  • Marinate chicken – mix together all chicken ingredients.
  • Remove the foil and spread chicken in a single layer across rice. Bake for 10-15 minutes. Then stir through optional egg whites, and sprinkle sliced green onion or coriander onto.
