Serves: one 8 inch/20cm pizza
Ingredients
Pizza Crust ingredients:

1 cup packed cooked, shredded chicken breast OR 1x 280g/10oz can of chicken breast (drained)

1 large egg

¼ cup parmesan cheese
Optional add-ins:
- 1/4 tsp (1.25 ml) onion powder
- 1/2 tsp (2.5 ml) salt
- 1/4 tsp (1.25 ml)Â black pepper
Suggested Pizza Toppings:

⅓ cup tomato paste
-
½ cup mozzarella cheese or low fat cheese

10-12 slices pepperoni
Method

Pizza Ctust: Preheat oven to at 200C/400F. In a medium sized bowl, combine chicken, cheese and egg. Press crust onto a lined baking sheet. I use a Reusable Baking Mat.

Bake the crust for 12-15 minutes until golden brown.

Remove crust and add your toppings of choice! Bake for another 5-10 minutes. You can broil if you want your cheese super melty. Remove from oven and allow to cool for a few minutes and enjoy!
Tip
For extra crispy base, ensure all water is drained from cooked or canned cooked chicken by using tea towel to absorb extra moisture.
