Italian Summer Salad

Say goodbye to boring salads with this delicious Italian Summer Salad with extra crunch!

Ingredients

  • 1 cucumber, quartered
  • 1 punnet cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 red onion, sliced
  • 1/4 cup pesto
  • 1/2 lemon, juiced
  • 1/2 cup mini mozzarella balls
  • Salt & pepper to taste
  • Handful of your favourite croutons and fresh basil leaves, to serve

Method

  1. Toss all ingredients together besides the croutons until combined. When ready to serve, sprinkle with croutons and fresh basil leaves.
