Author Amy Lee

Ingredients

  • 4 cups whole milk (1L/32oz) or skim milk, but not as creamy
  • 2 tbsp white vinegar 1 fl oz / 30ml
  • Spices to taste – salt pepper, herbs, or your favourites

Optional

  • 2 tbsp thickened cream

Instructions

  • Heat the milk over medium heat, stirring occasionally to prevent sticking.
  • When it just starts to boil, turn off the heat immediately.
  • Add the vinegar, stir gently, cover, and let it sit for 30 minutes.
  • Strain using a fine sieve and rinse the curds with cold water.
  • For a drier texture, gently squeeze out excess water using a clean cloth. For creamier texture, stir through thickened cream.
  • Season with salt, pepper, or your favourite herbs and serve.

Notes

  • Add chopped herbs like chives, parsley, or dill for a savory twist.
  • For a sweet version, mix with honey, cinnamon, or fresh fruit.
  • Store in an airtight container in the fridge for up to 3 days.
