Ingredients

Cottage Cheese Pizza Crust

  • 1 cup cottage cheese (200g)
  • 1 cup plain flour or gluten-free 1:1 flour add 1/4 tsp xanthan gum if your gf flour doesn't have it
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp seasonings (optional) I use garlic powder and oregano
  • 2 tbsp olive oil (optional, makes the dough soft)

Toppings

  • 2 tbsp tomato paste or tomato sauce (30g)
  • 1/2 cup light mozzarella, shredded (100g)
  • fresh basil

Instructions

  • Blend Cottage Cheese: If cottage cheese is watery, make sure to strain it or dough will be sticky. In a blender or food processor, blend the cottage cheese until smooth and creamy.
  • Prepare Pizza Dough: In a large bowl, mix the flour, xanthan gum (if using), salt, and baking powder. Make a well in the center and optional add the olive oil and the blended cottage cheese. Mix and knead the dough with oiled hands until a smooth, uniform dough forms. (If the dough is a little too sticky, add just a little sprinkle of extra gluten-free flour). Let the dough rest for a few minutes.
  • Pre-Bake the Crust: Preheat the oven to 230C/450F. Lightly sprinkle a sheet of parchment paper with gluten-free flour, then transfer the cottage cheese dough out onto it. Shape the dough into a circle or rectangle. Brush the top surface of the dough with a bit of olive oil and bake for 7–8 minutes to pre-cook the crust.
  • Add toppings and Bake Again: Remove from the oven, spread the marinara sauce on top, then add the shredded mozzarella and cherry tomatoes if using. Return to the oven for a few more minutes, until the cheese is melted and golden.
  • Garnish and Serve: Once out of the oven, top with fresh basil leaves and serve hot.
