
Ingredients
- 5 cups cooked chicken, diced store-bought rotisserie chicken
- 3/4 cup mayo try find mayo made with extra virgin olive oil instead of vegetable oil
- 1 tbsp curry powder
- 1/2 cup celery, diced
- 1/2 cup red capsicum, diced
- 1/2 cup red cabbage, shredded
- 1/3 cup coriander, chopped
- 1/3 cup green onion, sliced about 2 stalks
- 1/3 cup roasted cashews, roughly chopped
- 1/3 cup dates, roasted sub raisins or dried cranberries
- 1/2 tsp salt and pepper
To serve
- 1 head lettuce, or
- 1 cup rice or noodles
Instructions
- 1. Add all ingredients into a bowl and stir to comvine. Taste and adjust seasoning to your preference. Serve with lettuce cups or rice or noodles!
