
This Creamy Italian Tomato Chicken will be your new favourite go-to chicken recipe to whip up on a weeknight!
Quick one-pan meal, with golden pan seared chicken breasts! Cooked in a flavoursome and creamy tomato sauce with capers that take it to the next level, this easy chicken recipe takes only 30 minutes to make. It’s also great to make in bulk for meal prep for the week as it’s freezer-friendly.
Both the ingredients and the cooking method and makes this simple recipe so wonderful. Quickly browning the chicken and removing it until the end ensures they are still juicy when everything is done. The tang of the capers balances the sweetness of the onion and garlic infused wine reduction.

- Â thickened cream** or coconut cream for dairy-free

Method

Heat olive oil in a large skillet. Season chicken with 1 tsp basil, 1 tsp oregano, salt, and pepper and add to the pan and cook over medium-high heat, 3 to 4 minutes per side, or until lightly browned. Remove chicken breasts from pan; set aside.

Add butter to the skillet and when melted add onions and cook for 2 minutes. Stir in garlic and cook for 30 seconds.

Stir in the wine to dissolve the brown pieces found at the bottom of the pan; continue to cook for 4 minutes, or until reduced.

Stir in the passata, rest of the herbs, cream, and capers. Place chicken back in the pan. Bring to a boil; cover and simmer over medium-low heat for 8 minutes, or until chicken is cooked through.

Remove from heat and serve with carbs of choice, garnish with fresh parsley and serve.
Tip
*Tomato passata is the base for all Italian tomato sauces. It is uncooked tomato puree without seeds or skins which is seasoned liberally with salt, bottled and preserved to be used in sauce dishes throughout the year. Essentially, it is tomato sauce in its rawest form.
** You can also substitute light cream, heavy cream, evaporated milk, cream cheese or yoghurt for low fat.
– You can use chicken stock, apple juice or water instead of wine.
– Feel free to add a tablespoon of hot sauce or some chilli flakes to spice it up!
