Cranberry, Coconut & Lime Bliss Balls recipe

Ingredients

  • 2/3 cup dried cranberries (70g)
  • 1 cup desiccated coconut (55g) plus 2 tbsp to roll
  • 1 cup almond meal (100g)
  • 2 tbsp NutriVital Organic Cranberry Juice
  • 2 tbsp coconut oil, melted
  • 1 1/2 tsp lime rind
  • 1 tbsp lime juice

Method

  1. Process cranberries until finely chopped. Add remaining ingredients and process, using the pulse button, until mixture comes together. Roll into 16 small balls. Roll balls in extra coconut to coat.

Tip

Use matcha powder and freeze dried strawberry to coat the balls for festive healthy treats!
