This cottage cheese pizza is high protein, crispy, and easy to make with simple ingredients. A healthy homemade pizza recipe with a gluten-free option and over 18g of protein per serve.

There is a reason cottage cheese recipes have completely taken over the internet lately – they are easy, high in protein, affordable, and surprisingly delicious. This cottage cheese pizza might sound unconventional at first, but once you try the soft yet crispy crust and melty cheesy topping combination, it genuinely tastes like comfort food rather than “healthy food”.
Unlike traditional takeaway pizza, this version is lighter, higher in protein, and made with simple ingredients you probably already have at home. The cottage cheese blends into the dough to create a soft, fluffy texture while also adding extra protein and moisture. The result is a homemade pizza that feels indulgent while still being nourishing enough for an everyday lunch or dinner.
One of the best things about this cottage cheese pizza crust is how versatile it is. You can keep it classic with mozzarella and basil, make it gluten-free using a 1:1 gluten-free flour blend, or load it up with your favourite toppings for a higher protein meal. It is also much easier to digest than many takeaway pizzas, especially when made with quality ingredients.
If you are trying to eat more protein without relying on protein powders or ultra-processed “fitness foods”, this recipe is one of the easiest ways to do it. It is comforting, filling, crispy around the edges, and honestly tastes like real pizza – not a compromise.

What Does Cottage Cheese Do In Pizza Dough?
Cottage cheese adds moisture, softness, and protein to the dough while helping create a tender texture without needing yeast. Once blended, you do not taste the cottage cheese itself – it simply creates a soft, slightly chewy crust with more nutritional value than traditional pizza dough.
It is also an easy way to increase protein intake naturally using whole food ingredients instead of protein powders.
Tips For The Best Cottage Cheese Pizza
- Strain watery cottage cheese first or the dough may become sticky
- Blend the cottage cheese until smooth for the best texture
- Pre-bake the crust before adding toppings so it stays crisp
- Use baking paper for easier shaping
- Brush the crust with olive oil for a more golden finish
- Do not overload the pizza with toppings or the centre can become soggy

Gluten-Free Cottage Cheese Pizza
Ingredients
Cottage Cheese Pizza Crust
- 1 cup cottage cheese (200g)
- 1 cup plain flour or gluten-free 1:1 flour add 1/4 tsp xanthan gum if your gf flour doesn't have it
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp seasonings (optional) I use garlic powder and oregano
- 2 tbsp olive oil (optional, makes the dough soft)
Toppings
- 2 tbsp tomato paste or tomato sauce (30g)
- 1/2 cup light mozzarella, shredded (100g)
- fresh basil
Instructions
- Blend Cottage Cheese: If cottage cheese is watery, make sure to strain it or dough will be sticky. In a blender or food processor, blend the cottage cheese until smooth and creamy.
- Prepare Pizza Dough: In a large bowl, mix the flour, xanthan gum (if using), salt, and baking powder. Make a well in the center and optional add the olive oil and the blended cottage cheese. Mix and knead the dough with oiled hands until a smooth, uniform dough forms. (If the dough is a little too sticky, add just a little sprinkle of extra gluten-free flour). Let the dough rest for a few minutes.
- Pre-Bake the Crust: Preheat the oven to 230C/450F. Lightly sprinkle a sheet of parchment paper with gluten-free flour, then transfer the cottage cheese dough out onto it. Shape the dough into a circle or rectangle. Brush the top surface of the dough with a bit of olive oil and bake for 7–8 minutes to pre-cook the crust.
- Add toppings and Bake Again: Remove from the oven, spread the marinara sauce on top, then add the shredded mozzarella and cherry tomatoes if using. Return to the oven for a few more minutes, until the cheese is melted and golden.
- Garnish and Serve: Once out of the oven, top with fresh basil leaves and serve hot.
