Ever since cottage cheese started getting the attention it deserves, people have been turning it into the base of all kinds of high-protein recipes. This cottage cheese pizza toast might sound like something thrown together after a workout, but it is genuinely good. You get all the flavours of pizza in a lighter, macro-friendly version that comes in under 300 calories per serve. It takes about 15 minutes to make and is an easy go-to for a quick lunch, dinner, or post-workout snack. It feels indulgent, but still fits into your nutrition goals.

Ingredients

Cottage cheese – A creamy, high-protein option that acts as a lighter alternative to mozzarella while helping you hit your protein targets. Making your own avoids additives and improves texture.

Sourdough – A fermented bread with a crisp crust and chewy centre that is generally easier to digest.

Pizza sauce – A good-quality sauce keeps things simple and flavourful.

Italian seasoning – Just a small amount adds depth and makes the toast taste more like classic pizza.

Pepperoni or Italian salami – Optional, but adds a savoury, slightly spicy flavour and more texture.

Why you will love it

If you like pizza, this is an easy win. It delivers the key elements – creamy, cheesy, and crispy – without feeling heavy. The cottage cheese softens and warms through rather than fully melting, giving a texture similar to baked pasta dishes. The bread crisps up nicely, and the toppings bring everything together. Because it uses cottage cheese instead of traditional cheese, the result is lighter but still satisfying, without the greasy finish.

How to make cottage cheese (quick overview)

Heat milk to 82°C in a pot, remove from heat, and stir in vinegar until curds form. Let it sit for about 30 minutes. Strain through a cheesecloth or sieve and allow it to drain. Rinse under cold water if you want a milder flavour, or skip rinsing for a creamier result. Finish by adding salt and, if desired, a little cream or yogurt.

Variations and substitutions

Change the toppings to keep it interesting. Try a simple margherita style, a veggie version with mushrooms, olives, spinach, or sun-dried tomatoes, or something more unexpected like prosciutto with pineapple.

Make it vegetarian by skipping the meat and adding vegetables.

Use gluten-free bread if needed.

Add fresh herbs like basil or parsley for extra flavour.

Swap in a plant-based cottage cheese alternative to make it vegan.

Best served with

Pair it with a simple salad such as a Greek salad, coleslaw, or mixed greens. Roasted or air-fried vegetables also work well. If you want something more filling, serve it with a tomato-based soup or a light broth.

  • 1 pinch Italian seasoning
  • 1/4 cup mozzarella shredded
  • 3 slices pepperoni or Italian salami optional
  • Handful of fresh basil leaves optional

Instructions
