Ingredients

  • 300 g cottage cheese
  • 3 eggs
  • ½ tsp salt
  • 110 g rolled oats
  • 1 tbsp baking powder
  • 30 ml olive oil
  • Optional toppings: sprinkle with extra oats or seeds before baking for added crunch.

Instructions

  • Add all ingredients to a food processor and blitz until combined. Don’t overmix – you want the oats to break down slightly but not completely, otherwise the bread will turn out dense.
  • Pour the mixture into a lined or greased 10x20cm loaf tin.
  • Bake at 180°C/350°F for 40 minutes, or until golden brown and firm to touch.
  • Allow the bread to cool completely before slicing.
