Delicious Collagen Marshmallows are way better for you (taste wise and health wise!) than store-bought marshmallows.

Ingredients
In the blender:
- 1/2 cup almond milk
- 4 tbsp gelatin or agar agar
In a small pot:
- 1 cup almond milk
- 15 flavoured collagen (I use strawberry)
Optional:
- Fillings: frozen raspberries or blueberries, shaved coconut, cacao nibs
- tapioca starch or corn starch to coat the marshmallows to prevent them sticking to each other.
Method
- In blender, add 1/2 cup milk and 4 tbsp gelatin or agar agar. Let it sit for a couple of minutes to allow the gelatin to “bloom” (it will look like jelly).
- Gently heat 1 cup of milk and the 15g of collagen, stir until combined. Take off the heat and pour the warm liquid into the blender and blitz until smooth.
- Pour into moulds (ice cube trays, love heart moulds etc). Fun option is to pop some surprise frozen fruit in the middle of the moulds!
- Refrigerate for an hour until firm, pop out of the moulds and enjoy!
Tip
You can use any milk you desire!
