Chocolate Hazelnut Protein Mousse

Jump to Recipe Print Recipe

If you want something that tastes indulgent but still supports your goals, this chocolate hazelnut protein mousse is exactly that. It’s ultra creamy, rich in chocolate flavour, and finished with crunchy hazelnuts for that perfect contrast. It feels like a dessert you shouldn’t be eating – but it’s packed with protein and made from simple ingredients. The full batch comes in at around 575 calories with 70 g protein, or about 190 calories and 23 g protein per serving when divided into three. It’s quite rich, so smaller portions work well, or you can stretch it to four servings for something lighter.

Why you’ll love this high-protein dessert

  • Thick, creamy, and chocolatey with a hazelnut crunch
  • High in protein and actually satisfying
  • No baking required – quick and easy
  • Customisable sweetness and richness

Serving ideas & variations

  • Add a pinch of sea salt for a salted chocolate flavour
  • Swap hazelnuts for almonds or walnuts
  • Layer with berries for freshness
  • Chill longer or freeze slightly for a thicker mousse texture

Ingredients

  • 1 tub 2% cottage cheese 16 oz / ~450 g
  • 5-6 tbsp unsweetened cacao powder 30-36 g
  • 1/2-3/4 cup powdered monk fruit or preferred sweetener 60-90 g
  • 2 tbsp chocolate chips melted (30 g)
  • 2 tbsp crushed hazelnuts 20 g

Instructions

  • Add cottage cheese, cacao powder, and powdered sweetener to a small food processor. Blend until completely smooth and creamy, stopping to scrape down the sides as needed. You want zero curds and a silky texture. Taste and adjust sweetness.
  • Transfer to a container and refrigerate for 1-2 hours to thicken (you can eat it straight away, but chilling improves the texture).
  • Melt the chocolate chips in the microwave in 15-second intervals, stirring between each, until smooth. Add 1 tsp coconut oil if needed for a smoother drizzle.
  • Spoon into bowls, drizzle over the melted chocolate, and finish with crushed hazelnuts. Chill briefly if you want the chocolate to set into a firm layer.
