Brussels & Crispy Bacon Salad with Lemon Yoghurt Dressing

- 2 tbsp olive oil (extra virgin)
- 1 shallot, thinly sliced
- 1 350g/12oz bag brussels sprouts, thinly sliced
- 3 slices crispy bacon
- 3 tbsp non-fat Greek yoghurt
- 1 tbsp mayonnaise
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 garlic glove, minced

Heat olive oil over medium high heat then cook shallots until they’re just starting to crisp, about 2 minutes. Add brussels and cook until bright green, about 2 minutes. Season with salt and pepper. Add mixture to serving bowl.

In a small bowl, mix together yoghurt, mayo, lemon and garlic. Season with salt and pepper. Stir dressing and crispy bacon through brussels mixture until creamy and combined.
