Brussels & Crispy Bacon Salad

Brussels & Crispy Bacon Salad with Lemon Yoghurt Dressing

 

 
  • 2 tbsp olive oil (extra virgin)
  • 1 shallot, thinly sliced
  • 1 350g/12oz bag brussels sprouts, thinly sliced
  • 3 slices crispy bacon
  • 3 tbsp non-fat Greek yoghurt
  • 1 tbsp mayonnaise
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 garlic glove, minced
  1. Heat olive oil over medium high heat then cook shallots until they’re just starting to crisp, about 2 minutes. Add brussels and cook until bright green, about 2 minutes. Season with salt and pepper. Add mixture to serving bowl.

  2. In a small bowl, mix together yoghurt, mayo, lemon and garlic. Season with salt and pepper. Stir dressing and crispy bacon through brussels mixture until creamy and combined.
