No oil is needed to make the BEST Pork Belly with Crackling…in the airfryer! Just make sure you refrigerate your pork belly uncovered at least one day in advance, to dry it out which is the secret to achieving the crispiest pork crackling.

Equipment

  • airfryer

Ingredients

  • 1 kg boneless pork belly
  • 1 tbsp sea salt flakes
  • 1 tsp Chinese 5 Spice
  • 1 tsp ground white pepper

Instructions

  • Source pork belly at least one day in advance, and let it sit in fridge overnight uncovered to help it dry up. Right before cooking, pat it dry with paper towels. If you skip this step it will still work great however. Cross hatch the white pork belly skin with a knife, making sure to cut through the skin only and not the meat.
  • Mix the salt, Chinese 5 spice & pepper altogether then rub all over the pork belly, getting into the nooks and crannies of the skin.
  • Wrap pork in foil but leave the top uncovered, this keeps the meat moist and juicy but crisps up the skin to make crackling.
  • Set the airfryer temperature to 180C/350F and airfry for 60 minutes. Remove and rest for 10 minutes. To serve, pour all the pork belly juices on top of the crackling.
