Ingredients

Cheesecake

  • 450 g cream cheese
  • 3/4 cup (180ml) thickened cream
  • 3 eggs
  • 3/4 cup (150g) caster sugar
  • 1/2 tsp salt
  • 1 tsp vanilla essence

Optional Mix-Ins

  • 2 tbsp  matcha powder

Instructions

  • Blend all cheesecake ingredients into a food processor or blender until very smooth, this will take a few minutes. If using matcha powder, sift this in one tablespoon at a time.
  • Line a 7inch/17cm cake pan with baking paper. Pour the cheesecake mixture into there. Tap the sides of the cake pan to remove airbubbles, or pop with a skewer.
  • Place pan into the air fryer and set the temperature to 200°C for 25-30 minutes. It is done when there is a gentle wobble in the middle and a very dark brown top. Once it’s done, let the cheesecake sit in the air fryer for 10 minutes, then remove and let cool. For the best flavour, let cheesecake chill in the fridge for a few hours or overnight. Slice and enjoy! Can be frozen for up to 1 month.
