These delicious 3 ingredient scones are the fastest and easiest scones you will ever make! Incredibly fluffy, moist and soft scones made from scratch using only 3 basic pantry ingredients – self raising flour, cream and lemonade. The secret ingredient is lemonade – but they seriously don’t taste of lemon at all!
I definitely recommend making your own jam and cream, it’s much healthier, fresher and tastier! I love using the Nourish in 5 Berry Chia Jam and making 1 ingredient whipped cream.
Store-bought whipped cream has a heap of additives and artificial colours and flavours.
Scones are best served warm but MUST be served with copious amounts of cream and jam! 🙂

Ingredients
- 3 1/2 cups self-raising flour*
- 1 cup (300ml) thickened cream** or full fat coconut cream for vegan
- 1 cup (300ml) lemonade
- To serve: jam and whipped cream
Method
Scones:
- Preheat oven to 200°C/390°F (180°C fan). In a bowl, add self-raising flour and make a well in centre, then add thickened cream and lemonade.
- Mix all ingredients together until almost fully combined – the dough should be soft and fairly sticky.
- Flour your surface and knead dough gently, about 3-5 kneads. Less kneading = fluffier scones. Roll flat with a rolling pin until its 3cm thick, then use a cookie cutter to cut 8 circle shapes.
- Place on a baking tray lined with a Reusable Baking Mat. Brush with milk and bake for 15 minutes.
How to make your own whipped cream:
- Add leftover thickened cream to a bowl, optional to add 1 tbsp maple syrup and a touch of vanilla essence.
- Whip the left over thickened cream with a whisk attachment for about 1-2 minutes until whipped cream texture – light, airy and creamy!
Tip
* To make self-raising flour for this recipe with plain flour, mix together 3 1/2 cups of plain flour and 7 teaspoons of baking powder in a bowl.
** Thickened cream has a milk fat percentage of 35%. In the US, thickened cream is called ‘heavy cream’ or ‘whipping cream’.
– This recipe is very forgiving – you can sub in sour cream instead, use soda instead of lemonade, add grated cheese… basically anything goes! 👌
