Healthy Red Velvet Waffles with Cream ‘Cheese’ Glaze {Protein} {Vegan}

Red Velvet Waffles that are actually good for you, and all natural colouring from beetroot powder!  (no sugary, syrupy, artificial pre-made mixes here)

Packed with fibre, protein and healthy fats, these waffles make a nutritious start to the day, but also a delicious sweet treat. Drizzled with moorish vegan Cream ‘Cheese’ Glaze, this is a recipe you’ll be making over and over again.

I use the Vegan and Organic Raw Cacao Protein from Activated Nutrients, which gives these waffles a rich, chocolatey flavour.

Waffles

  • 1 1/2 cups white spelt flour or whole wheat pastry flour (180g)
  • 1/2 cup chocolate protein powder (45g) (I used Activated Nutrients Daily Protein Cacao)
  • 1/3 cup raw cacao powder or cocoa powder (35g)
  • 2 1/2 tbsp beetroot powder (18g)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups unsweetened almond milk (450g)
  • 1/3 cup maple syrup (90g)
  • 1/4 cup coconut oil (35g)
  • 2 tbsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • Optional 1/4 cup dark choc chips

Cream Cheese Sauce

  • 1/2 cup cashew pieces, soaked for several hours, drained and rinsed (80g)
  • 3/4 cup plain unsweetened soy or coconut yogurt or greek yoghurt if not vegan (170g)
  • 1/2 tsp vanilla extract
  • squeeze of lemon juice
  • 1/4 cup almond milk

 

Waffles

  1. In a large bowl, whisk together all dry ingredients (except the choc chips). Set aside. In another bowl, combine all wet ingredients.
  2. Pour the wet ingredients into the dry and stir well to combine. Let sit for about 10 minutes and in the mean time warm up both your waffle iron and your plates in the oven on a low heat.
  3. When the batter is ready, spoon batter 3/4 full onto a lightly greased waffle iron and cook for 6-8 minutes (or according to the whims of your waffle iron) or until steam has nearly stopped rising. Remove waffle and place onto warm plate. Repeat the remaining waffles.


Cream Cheese Sauce

  1. In a blender or food processor, combine all of the ingredients and process until very smooth. Transfer to a small jug or bowl.
  2. Serve the hot, crispy waffles with plenty of cream cheese sauce and top with fresh berries and choc chips.
